You can never have too many pumpkin snacks! We're loving this simple granola bar recipe. It's sure to satisfy that fall-flavored sweet tooth!
Ingredients:
- 2 ¼ cups rolled oats
- ½ cup honey
- 1 cup pumpkin puree - 1 tsp. vanilla extract - ¼ cup chia seeds
Directions:
- Preheat the oven to 350 degrees
- Line a 8x8" baking sheet with parchment paper
- In a medium bowl, add pumpkin, honey, and vanilla extract. Mix well
- Fold oats and chia seeds into batter, mix well
- Place dough in baking dish, and press down until entire sheet is evenly covered
- Place in the oven for 20-30 minutes, test consistency with toothpick
