This oatmeal looks like the perfect way to start your day, especially on those chilly autumn mornings! Let us know what you think of this recipe, we know we love it!
-2 large eggs
-3 medium overripe bananas, mashed
-1 cup canned pumpkin
-1 1/2 cups skim milk
-2 Tbs melted butter
-1 tsp vanilla extract
-2 1/2 cups old fashioned oats
-1 1/2 tsp pumpkin pie spice
-1/2 tsp nutmeg
-2 dashes cardamom
-1/2 tsp cinnamon
-1 tsp baking powder
-1 Tbs Heartland Chia seeds
-1/2 cup maple walnuts
-1/2 cup dark chocolate chips or chunks
Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick cooing spray.
In a medium/large bowl, mix together eggs, mashed banana, pumpkin, milk, butter, and vanilla extract until combined.
Next, add oats, pumpkin pie spice, nutmeg, cardamom, cinnamon, baking powder, and Heartland Chia seeds until well combined.
Lastly sprinkle on walnuts and dark chocolate chips. Lightly press into the oatmeal "batter."
Pour mixture into prepared pan and bake for 25 minutes until edges start to become slightly golden brown, or until toothpick comes out clean. Serve warm, and store in the refrigerator!
